Further manufacturer information:
Wüsthof Classic Ikon series. Extreme precision with perfect ergonomics. Black and elegant. Agile and robust. The Classic Ikon series combines perfect ergonomics, excellent balance and an endlessly sharp blade in a timeless design. Before honing, every blade is laser-sharpened using Wüsthof's patented PEtec process, so the best edge angle delivers the best possible cutting sharpness. The 58 HRC blade, forged from a single piece of stainless X50CrMoV15 steel, runs through the handle, is extremely sharp and stays that way for a very long time. The special construction makes cutting, slicing, chopping and portioning easier. Thanks to their special shape, the knives are well balanced and their ergonomic grip fits comfortably in the hand. The handle panels are made of a special synthetic material and are triple-riveted for lasting durability. Seamless and completely hygienic, they are easy to handle. The handle end is decorated with a laser-engraved Wüsthof logo. Recommended for everyday, effortless kitchen use by home cooks and professional chefs alike. What is more, the Classic Ikon is a tool used by the German National Culinary Team.
The Wüsthof Classic Ikon series has NSF (National Sanitation Foundation) certification for public health and food safety.
• Double bolster geometry – balance and ergonomics: the special geometry with a double bolster ensures balanced handling. The knife therefore fits well in the hand and guarantees even cutting.
• Half bolster: thanks to the thinner support structure, the knife is lighter. This allows energy-saving work. The design also allows use of the entire blade and resharpening.
• Wavy edge: the inner-formed wavy edge gives clean cuts and suits large fruit, vegetables or roasts. The wide, long blade is ideal for bread and cakes.
• Precision double-serrated edge: the bread knife with its unique double-serrated edge cuts a hard crust as easily as soft bread or large fruit such as pumpkin. It stays sharp longer and requires less effort when cutting. The difference compared with a traditional serrated edge is immediately noticeable.
• Paring knife: the practical knife with a short curved cutting edge is especially useful for peeling and cleaning round fruit and vegetables. Valuable vitamins remain intact thanks to the precision blade, which reduces food waste.
• Nakiri: this knife has an exceptionally thin, Asian-style blade and is extremely sharp, with a 20° edge angle. The fluting ensures that thin or soft foods are easier to remove from the blade during use and do not stick to it.
