Before sharpening, every blade is laser-guided using Wüsthof's patented PEtec process. This ensures the best edge angle for the best possible cutting sharpness. The 58 HRC single-piece forged stainless X50CrMoV15 steel blade runs through the handle, is extremely sharp and stays that way for a very long time. The special design makes cutting, slicing, chopping and portioning easier. Thanks to their special shape, the knives are well balanced and their ergonomic handle fits comfortably in the hand. The handle panels are made of a special synthetic material and are triple-riveted without seams, so they are completely hygienic and easy to handle. • Double bolster geometry – Balance and ergonomics – the special geometry with a double bolster ensures balanced handling. The knife therefore fits well in the hand and guarantees even cutting.
• Half bolster – Thanks to the thinner bolster construction of the knife, it is lighter in weight. This allows energy-efficient work. The design also allows the full blade to be used and re-sharpened.
• Wavy edge – The wavy edge formed on the inside produces a clean cut and is suitable for large fruit, vegetables or roasts. The wide, long blade is ideal for bread and cakes.
• Precision double-serrated edge – The bread knife with its unique double-serrated edge cuts through a hard crust as easily as soft bread, or large fruit such as pumpkin. It stays sharp for longer and requires less effort when cutting. The difference compared with a traditional serrated edge is immediately noticeable.
