• Blade material: single-piece forged, laser-sharpened stainless X50CrMoV15 steel blade, 58 HRC hardness
• Blade length: 9 cm
• Blade width: 2 cm
• Handle material: riveted flexible synthetic handle panels

Further manufacturer information: After the cook's knife, the utility knife is the second most important knife to have at hand in the kitchen. Ideal for cutting small fruits and small vegetables.
Wüsthof Classic series
Robust, sharp and functional: the classic kitchen tool series, which contains more than 70 different blade shapes (blade lengths from 6 to 36 cm), stands out for its ease of use, and this is the right tool for every home cook and professional. Blade forged from a single piece of stainless (X50CrMoV15) steel, 58 HRC hardness, with a 29° edge angle. This special, high-carbon, corrosion-resistant alloy ensures that the critical properties of every Wüsthof knife are retained from the start: razor-sharp, long-lasting cutting edge, high rust resistance, and an easily restored edge. Made in 55 refined production steps, from forging through hardening and sharpening to polishing, and every perfectly manufactured Classic knife passes more than 20 uncompromising quality control points. The Precision Edge Technology (PEtec) laser-controlled sharpening process makes the edge particularly sharp. The final hand-finishing by Wüsthof's experienced specialists ensures extraordinary sharpness and quick, easy cutting.
The handle panels are made of comfortable and durable synthetic material, polyoxymethylene (POM), which has a denser molecular structure to resist fading and discolouration. The full bolster protects the hand, ensuring safety and an even distribution of weight. The sturdy handle panels are triple-riveted for durability.
Wüsthof technology offers outstanding sharpness: very high initial cutting performance, exceptionally long edge retention, long blade life, optimal cutting edge along the full length of the blade, and a unique, consistently high and reproducible quality.
The Wüsthof Classic series has NSF (National Sanitation Foundation) public health and food safety certification.
• Hand guard: The ergonomic knife handle fits well in the hand, and the curved end of the handle prevents slipping. The sturdy handle panels are fixed with stainless steel rivets.
• Full tang: The blade runs through the handle, giving the knife reliable stability. It also acts as a counterweight for the balance of the blade.
• Precision double-serrated edge: The bread knife with its unique double-serrated edge cuts hard crust as easily as soft bread or large fruits such as pumpkin. The difference compared with a traditional serrated edge is immediately noticeable.
• Full bolster: The full finger guard reliably protects the fingers during everyday cooking, and the balance makes quick and precise work easier.
• Hollow-ground blade: When cutting, small air pockets form at the recesses of the blade. The positive effect is that thin or soft foods are easier to remove from the blade during use and do not stick.
• Cleaver: This distinctive new knife is perfectly suited to portioning meat and effortlessly cuts large fruits and vegetables. This special design is an extremely artistic creation in forged steel.
