Wüsthof Classic Ikon series. Extreme precision with perfect ergonomics. Black and elegant. Agile and robust. The Classic Ikon series combines perfect ergonomics, excellent balance and an endlessly sharp blade in a timeless design. Before sharpening, every blade is laser-sharpened using Wüsthof's patented PEtec process, which gives the best edge angle for the best possible cutting sharpness. The 58 HRC stainless X50CrMoV15 steel blade, forged from a single piece, runs through the handle, is extremely sharp and stays sharp for a very long time. The special construction makes cutting, slicing, chopping and portioning easier. Thanks to their special shape the knives are well balanced and the ergonomic handle sits comfortably in the hand. The handle panels are made of a special synthetic material and are permanently triple-riveted without joints, so they are completely hygienic and easy to handle. The end of the handle is decorated with a laser-engraved Wüsthof logo. Recommended for everyday, effortless kitchen use by home cooks and professional chefs alike. In addition, the Classic Ikon is a tool used by the German National Culinary Team. The Wüsthof Classic Ikon series holds NSF (National Sanitation Foundation) certification for public health and food safety.
• Double bolster geometry: balance and ergonomics. The special geometry with a double bolster provides balanced handling, so the knife fits well in the hand and guarantees an even cut.
• Half bolster: thanks to the thinner support structure of the knife it is lighter, which allows energy-efficient work. The design also allows the full blade to be used and re-sharpened.
• Scalloped edge: the scalloped edge formed from the inside gives a clean cut and suits large fruit, vegetables or roasts. With its wide, long blade it is excellent for bread and cakes.
• Precision double-serrated edge: the bread knife with its unique double-serrated edge cuts hard crusts as easily as soft bread or large fruit such as pumpkin. It stays sharp longer and requires less effort when cutting. The difference compared with a traditional serrated edge is immediately noticeable.
• Paring knife: this practical knife with a short curved cutting edge is especially useful for peeling and cleaning round fruit and vegetables. Valuable vitamins remain intact thanks to the precision blade, which reduces food waste.
• Nakiri: this knife has an exceptionally thin, Asian-style blade and an extremely sharp 20° edge angle. The grooves ensure that thin or soft foods can be removed more easily from the blade during use and do not stick to it.
