The edge is shaped to a 28° edge angle, and the final hand-finishing by specialists delivers extraordinary sharpness and quick, easy cutting. Thanks to their very high hardness of 56 HRC, they are comparable in quality and sharpness to forged knives. Their lower weight and unique ergonomics make them very comfortable to hold, highly balanced and sturdy, making cutting easier and less tiring for both the hand and the wrist. • Hand guard – The ergonomic knife handle fits well in the hand, and the curved end of the handle prevents slipping. The robust handle panels are secured with stainless steel rivets.
