The Chinese chef's knife is cleaver-shaped but not suitable for cutting through bones. It is used for slicing and chopping herbs and vegetables, and for cutting meat, cabbage, vegetables, herbs and fruit. Wüsthof Chinese chef's knives are designed specifically for these requirements. Wüsthof Gourmet series
Agile and versatile. Gourmet knife blades are laser-cut from stainless X50CrMoV15 steel sheet and then processed in 35 production stages. The edge is shaped to a 28° edge angle, and the final hand finishing by specialists provides exceptional sharpness and fast, easy cutting. Thanks to their very high 56 HRC hardness, they are comparable in quality and sharpness to forged knives. Due to their low weight and unique ergonomics, they are very comfortable to hold, highly balanced and strong, making cutting easier for both hand and wrist. The special black plastic handle is triple-riveted. Dishwasher safe, and therefore extremely hygienic. The Gourmet series offers excellent value for money and, with more than 40 different products, is as useful for households as a starter set or as a basic professional kitchen kit.

• Hand guard – The ergonomic knife handle fits well in the hand, and the curved handle end prevents slipping. The robust handle panels are secured with stainless steel rivets.
• Tomato knife – The tomato knife's finely serrated edge slices smoothly through firm tomato skin, while the split tip lifts the slices. The knife can also be used well for cheese and fruit.
• Decorative knife – A special blade for decorative cutting of raw and cooked fruit and vegetables, or for finely portioning butter, is ideal for creative cooks.
• Full tang – The blade runs through the handle, providing reliable stability. It also acts as a counterweight, balancing the blade.
