With their special features, the Ikon series knives are a festive experience. The riveted handle made of selected (sustainably grown) African grenadilla (Dalbergia melanoxylon) is striking, and every piece has a unique pattern. Thanks to the special water-resistant and hygienic properties of this wood, it is particularly suitable for use in the kitchen. At the same time, the handle is natural, comfortably warm to the touch and ergonomically shaped, a real pleasure to hold and use. The unique geometry with a double bolster fits well in the hand, guarantees optimal balance and ensures an even cut, even over longer periods. Thanks to the half bolster, the knife is lighter thanks to its thinner bolster construction, allowing energy-efficient work. The design also allows full use and sharpening of the blade. The blade is forged from a single piece of high-quality stainless X50CrMoV15 steel, with a 29° edge angle, and is characterised by a high degree of robustness and durability. The blade runs the full length of the handle (full tang). The final hand finishing by Wüsthof's experienced specialists provides extreme sharpness and quick, easy cutting.
• Double bolster geometry – balance and ergonomics: the special geometry with a double bolster ensures balanced handling. The knife therefore fits well in the hand and guarantees an even cut.
• Half bolster: thanks to the thinner bolster construction, the knife is lighter. This allows energy-efficient work. The design also allows full use and re-sharpening of the blade.
• Peeling knife: the practical knife with a short, curved cutting edge is particularly useful for peeling and cleaning round fruit and vegetables. Valuable vitamins remain intact thanks to the precision blade, which reduces food waste.
• Handle: the African grenadilla wood handle scales are riveted securely and fitted without gaps. The water-resistant wood is extremely hygienic and comes from controlled cultivation.
• Ribbed blade: when cutting, small air pockets form at the blade's indentations. This means thin or soft foods are easier to remove from the blade during use and do not stick to it.
• Precision double-serrated edge: the bread knife with its unique double-serrated edge cuts hard crusts just as easily as soft bread, or large fruit such as pumpkin. The difference compared with conventional serrated edges is immediately noticeable.
