Victorinox Grand Maître Wood series
The Grand Maître Wood forged knife series offers exceptional quality, balance and timeless elegance. Both amateur and professional chefs will love these knives to turn their kitchen into a palace and treat their loved ones to extraordinary meals. The blade is made of rust-resistant, wear-resistant steel, evenly hardened and forged from a single piece. The knife has a full tang construction, with the blade running the full length of the handle. The transition at the base of the blade is smooth and seamless. The bolster prevents the hand from sliding onto the blade. The elegant wooden handle, made from high-quality modified maple, has an ergonomic design that guarantees comfort and excellent handling even over longer periods. The production of modified maple is an environmentally friendly, patented process that increases the wood's durability and hardness and gives it its rich brown colour.
Victorinox is proud of its more than 130 years of experience in manufacturing high-quality knives. The brand offers a lifetime guarantee against defects in material and workmanship.
Dishwasher use is not recommended.
Modified maple
The production of modified maple is an environmentally friendly, patented process that uses a bio-based liquid to improve the properties of sustainable softwoods. The process permanently alters the wood's cell structure, giving it excellent properties and a rich brown colour.
There are various wood modification methods, each of which permanently changes the structure of the cell walls. These include heat treatment, acetylation and polymer grafting. The modified wood we use is produced by forming solid furan polymers that bond into the wood's cells. This increases the wood's stability, as well as its durability and hardness.
The process is based on impregnation with furfuryl alcohol, a liquid produced from agricultural bioproducts. Thus, a plant-based waste product is used to give another plant product – namely wood – enhanced strength and durability.
Step 1: Impregnation. Impregnation is the process by which the wood is soaked in a bio-based liquid. During impregnation, the furfuryl alcohol produced from the bio-based liquid is fixed into the wood so that its dimensions remain stable.
Step 2: Curing and drying. After impregnation, the wood is heat-dried, causing the furfuryl alcohol to polymerise. This step is called hardening. The polymers created in the wood's cells by this process are very stable and cannot break down or leave the wood.
Step 3: Modified maple. After treatment, the wood's cell walls are about 50% thicker due to the stable, fixed polymers.
The permanent modification of the wood's cells ensures outstanding stability, maximum hardness and a guaranteed long service life for the wood product. The wood offers a high level of safety, as it rarely splinters and contains no toxins or chemicals.
In addition, modified maple resists rot, fungi and other wood-destroying microorganisms.
Low-maintenance material that requires no further treatment, such as oiling or other impregnating solutions, beyond normal cleaning.
