Further manufacturer information:

Victorinox Grand Maître Wood series. The Grand Maître Wood forged knife series offers exceptional quality, balance and timeless elegance. Amateur and professional chefs alike will love these knives, turning their kitchen into a palace and treating loved ones to extraordinary meals. The blade is made of rust-resistant, wear-resistant steel, evenly hardened and forged from a single piece. The knife has a full-tang construction, with the blade running through the handle. At the base of the blade the transition is smooth and seamless. The bolster prevents the hand from slipping onto the blade. The elegant handle, made from high-quality modified maple, has an ergonomic design, guaranteeing comfort and excellent handling even over longer periods. The production of modified maple wood is an environmentally friendly, patented process that increases the wood's durability and hardness and gives it its rich brown colour. Victorinox, with over 130 years of experience, takes pride in producing high-quality knives. The brand offers a lifetime guarantee against defects in material and workmanship. Dishwasher use is not recommended.

Modified maple wood

Modified maple wood is produced through an environmentally friendly, patented process that uses a bio-based liquid to improve the properties of sustainably grown softwoods. The process continuously modifies the cell structure of the wood, giving it excellent properties and a rich brown colour. There are various wood modification methods, each of which permanently changes the structure of the cell walls. These include heat treatment, acetylation and polymer grafting. The modified wood we use is produced by forming solid furan polymers that bind themselves into the wood's cells. This increases the stability of the wood as well as its durability and hardness. The process is based on impregnation with furfuryl alcohol, a liquid produced from agricultural bio-products. Thus a plant-based waste product is used to give another plant product, namely wood, increased strength and durability.

Step 1: Impregnation. During impregnation the wood is soaked in a bio-based liquid. The furfuryl alcohol produced from this bio-based liquid is fixed into the wood so that its dimensions remain stable.

Step 2: Staining and drying. After impregnation the wood is heat-dried, causing the furfuryl alcohol to polymerise. This step is called curing. The polymers created in the wood's cells by this process are very stable and cannot break down or leave the wood.

Step 3: Modified maple wood. After treatment, the wood's cell walls are about 50% thicker due to the stable, fixed polymers. The permanent modification of the wood's cell structure ensures outstanding stability, maximum hardness and a guaranteed long service life. The wood offers a high level of safety, as it rarely splinters and contains no toxins or chemicals. Modified maple wood is also resistant to rot, fungi and other wood-destroying microorganisms. It is a low-maintenance material that requires no further treatment beyond normal cleaning, such as oiling or other impregnating solutions.
