DLC-coated blade for extraordinary performance.
The diamond-like carbon (DLC) coated blade is extremely hard and durable, and this premium quality is rare in the knife world. The black, almost magical coating increases the surface hardness of the steel from 58 to an exceptional 104 Rockwell. For connoisseurs this is a remarkable advantage: its extremely robust nature makes it practically insensitive to harmful external influences, and the diamond-like surface is highly resistant to heat. DLC was originally developed for the extreme conditions of space travel and motorsport; Wüsthof is the first knife manufacturer in the world to apply this technology to a fully forged knife.
The Lotus Effect: particles simply roll off.
The Performer knife glides through food almost without friction: full of momentum. Thanks to the particularly low friction and non-stick properties of the diamond-like coating, and the lotus effect of the black DLC surface, particles simply roll off the blade. Freshly cut pieces of food, such as slices of juicy onion, slide off: an ideal situation when speed and precision are needed during intensive kitchen work. Thanks to the hydrophobic effect, all liquids simply run off, including acids from citrus fruits, as well as fats or starches such as those from potatoes. Simply wipe the blade after each use, and the gleaming blade will look like new.
Hexagon Power Grip – full control, always.
The high-performance DLC technology is perfected by the innovative, non-slip Hexagon Power Grip. Its non-slip honeycomb structure ensures optimal grip in every situation and outstanding control. The knife can be held firmly even in wet or demanding conditions, so you can always use the blade safely and precisely. The glass-fibre reinforced polyamide handle is easy to handle and dishwasher safe: suitable for everyday use. Overall, the Hexagon Power Grip consistently supports the performance promise of the DLC blade.
